Cashew Biscuits
Let me post this recipe without much introduction 🙂 So here is a simple Goodday style cashew cookies. Made with organic whole wheat flour and Parry’s Amrit brown/cane sugar, this is surely going to make you stop buying biscuits from the market. As always,
I have used a 240 ml cup. Do not knead the dough too much or else your biscuits would turn out hard. Just assemble all ingredients till it comes together. Use good quality cashew nuts for a better flavour. If you are using salted butter, please skip the salt.

Ingredients:
- Whole wheat flour 125 gm
- Corn flour 15 gm
- Milk powder 10 gm
- Salt a pinch
- Baking soda a pinch
- Cane sugar 75 gm
- Butter 75 gm
- Cashew 1/2 cup
- Vanilla extract 1/2 tsp
- Milk 1-2 tbsp
Method:
- Cream the butter and sugar till it’s soft and pale in colour.
- Add vanilla extract and mix.
- Chop the cashews into small pieces.
- Mix the whole wheat flour, cornflour, milk powder, salt and baking soda in a big bowl.
- Add the chopped cashews and combine.
- Slowly fold in the dry ingredients into the butter mixture.
- Add one or two tablespoons of milk form a dough. Do not knead hard.
- Refrigerate the dough for atleast half an hour.
- Line a baking tray with parchment paper and preheat the oven with both rods and fan mode on for around ten minutes at 160-170 degree Celsius.
- Take some dough and roll it between two layers of parchment paper and cut into desired shapes.
- Place the cookies neatly on the baking tray and bake till the sides appear golden. I baked for around 22-24 minutes.
- Remove the tray and cool for 4-5 minutes.
- Transfer the cookies on to a cooling rack and cool well.
- Store in airtight container and enjoy with a cup of tea or coffee.
Tasty cookies, Pradeepa. But my doughwas a little crumbly and I could not shape them. Should I have added more milk?
3/4 cup plus 1 tbsp flour, 2 tbsp corn flour, 2 tsp milk power, 1/4 cup plus 2 tbsp sugar, butter 1/4 cup 1 tbsp, – for those who use cups.
Better to follow weight measurements. You could have added lil more butter. Don’t add too much milk. Hope this helps. Good luck

Hi Pavana. Weight measurements are always more precise than cup. Also it’s universal as cup sizes may differ. However if you want any particular conversion, please let me know. I use a 240 ml cup which gives around 125-130 gm apf/WWF, 200 gm sugar, 226 gm butter and so on
