Aalu Beans
A quick and jhatpat recipe made with potatoes and French beans. A simple stir fry made by first blanching the beans and potatoes so that they do not lose their crunch. Beans are a good source of vitamin A and C. They are also low in calories and doesn’t contain saturated fat. Moreover, they are rich in minerals like iron, calcium and magnesium. Try to buy the tender ones which will be soft and juicy.
Fresh beans are used widely in soups, stews and other curries.
This is a quick no fuss recipe with minimal ingredients. Do not overcook it. Feel free to add a tomato and some fresh green chilies.
Ingredients:
- Potatoes 2
- Beans 200-250 gm
- Onion 1
- Salt to taste
- Turmeric powder 1/2 tsp
- Red chili powder 1 tsp
- Refined oil 2 tsp
- Curry leaves handful
- Mustard seeds 1/2 tsp
Method:
- Peel the potatoes and slice them finely.
- Wash and chop the beans into 3/4-1 inch long pieces. Chop the onion finely.
- Boil water with a pinch of salt and blanch the beans and potato pieces for 4-5 minutes. Do not discard the water. You can use it in your dal or to knead rotis.
- Drain the water and transfer them into a bowl cold water.
- Heat oil in an iron kadhai and add mustard seeds.
- When they crackle, add onion and curry leaves.
- Once the onion turn translucent, add the blanched beans and potatoes.
- Now add salt, turmeric powder and red chili powder.
- Fry till they are slightly crispy and the potatoes turn golden.
- Serve it hot with rice or rotis.
