Bhindi Methi Paneer Stir Fry
How many of you are methi leaves fan? I simply love it in any form; be it methi parathas or methi aalu subzi or methi pulao. I even love adding a handful of methi leaves to any subzi. But usually most of us would be using it in parathas or with aalu or matar. How about making a simple methi stir fry with
some ladies fingers and few pieces of paneer. Trust me, it’s a brilliant combination. Tastes awesome with phulkas or dal chawal.
Saute the ladies finger in a frying pan or kadhai till they are almost crisp. However, do not overcook the methi leaves. Add the paneer pieces and chopped tomatoes. Toss well and serve immediately. Ingredients:
- Bhindi 150 gm
- Paneer 100 gm
- Methi leaves 1 cup
- Salt to taste
- Onion 1
- Tomato 1
- Green chillies 1-2
- Turmeric powder 1/2 tsp
- Red chili powder 1/2 tsp
- Cumin powder 1/2 tsp
- Ginger 1/2 inch piece
- Refined oil 2 tbsp
Method:
- Wash the vegetables and cut them finely.
- Heat oil in an iron kadhai and add the onion, green chilies and ginger.
- When they are translucent, add the chopped ladies finger.
- Add salt, turmeric powder and red chili powder and toss.
- Saute it on medium flame till the ladies finger is nice and crisp.
- Now add the finely chopped methi leaves and cook for two minutes.
- Add the paneer cubes and tomato pieces and stir gently.
- Sprinkle some cumin powder and mix well.
- Remove from heat and serve it hot with phulkas or dal-chawal.
