Spicy Paneer Burji
Paneer is surely one of the favorites of many of us. Paneer can lift up any dish and make it more interesting and delicious. Add it in any of your stir fries or use it as a filling in parathas or simply make a dry burji or add in cutlets or kebabs, it surely tastes awesome. Paneer is a good source of protein, calcium, potassium and folate. Its indeed a versatile ingredient.
Ingredients:
- Paneer 200 gm
- Onion 1 big
- Tomato 1 big
- Capsicum 1 small
- Garlic 2 cloves
- Ginger a small piece
- Salt to taste
- Turmeric powder 1/2 tsp
- Red chili powder 1 tsp
- Pav bhaji masala 1-2 tsp
- Milk 1/4 cup
- Fresh cream 1-2 tbsp (optional)
- Coriander leaves 3-4 sprigs
- Oil 1 tbsp
Method:
- Finely chop the onion, tomato, capsicum, ginger, garlic and coriander leaves.
- Heat oil in a pan and add the cumin seeds.
- When they splutter, add the chopped onion, ginger and garlic.
- Saute it till the onions are translucent.
- Now add the spices, salt and tomato.
- Cover and cook till the tomato is soft and mushy.
- Add the paneer either chopped finely or grated into the masala and mix well. Now add the finely chopped capsicum pieces.
- Add some milk and bring to a boil.
- Remove from flame and garnish with finely chopped coriander leaves.
- Serve it hot with rotis, phulkas or pav.
