Boiled Egg Burji
My hubby is a big fan of eggs. He can eat eggs at any time of the day. So I often make boiled egg curry or egg moilee, egg stew or my mom’s style egg masala(quite similar to shakshuka). The other day I tried making a burji with boiled eggs and hubby liked it a lot. But my eggs were a bit
soft boiled and hence couldn’t cut them neatly. So I made it again few days back and here is the simple recipe.
Do remember to boil your eggs till they are fully cooked. Peel them only after they are cooled well. You can use any whole spices if you like. These taste good when they are hot. Serve them with hot phulkas or rotis.
Ingredients:
- Boiled eggs 2
- Salt to taste
- Onion 1 big
- Tomato 1 big
- Garlic 2 cloves
- Ginger 1/2 inch piece
- Green chilies 1-2
- Turmeric powder a pinch
- Red chili powder 1/2 tsp
- Pepper powder 1/2 tsp
- Garam masala a pinch
- Refined oil 1 tbsp
- Coriander leaves 2-3 sprigs
Method:
- Chop the boiled eggs into medium size pieces.
- Chop the onion, green chilies, garlic, ginger and tomato finely.
- Heat oil in a pan and saute the onion, ginger, garlic and green chilies till they are soft.
- Add tomato pieces, salt and other spices. Cook till tomato pieces are soft.
- Add a tablespoon of water and mix well.
- Now add the chopped egg pieces and toss gently.
- Add freshly crushed pepper powder and garnish with finely chopped coriander leaves.
- Serve hot with phulkas.
