Potato Raita
I am sure that there would be only very few haters of potato. It’s such a versatile vegetable and pairs beautifully with almost every other vegetable. carbohydrates and good for growing kids.
The recipe is fairly simple and quick. You can toss the potatoes and some spices till it’s slightly crunchy and then add it to tempered or spiced and whisked curd. If desired, you can temper it with mustard seeds and curry leaves. I have used boiled potatoes. Having a stock of boiled potatoes in the refrigerator always comes handy. Ingredients:
- Boiled potato 1 big
- Onion 1 small
- Salt to taste
- Thick curd 1-1.5 cups
- Sugar a pinch
- Refined oil 2 tsp
- Red chili flakes as required
- Turmeric powder a pinch
- Chat masala a pinch
- Roasted cumin powder a pinch
- Chopped coriander leaves 2 tsp
Method:
- Chop the onion and boiled potato finely.
- Heat oil in a pan and saute the onion and potato pieces.
- Add salt and other spices and cook till it’s almost crisp.
- Whisk the curd or strain it. Add salt and sugar and mix well.
- Transfer the cooked onion-potato mixture into a serving bowl.
- Add the curd and mix well.
- Sprinkle some chili flakes and chat masala and chopped coriander leaves.
- Serve it with a paratha of your choice.
- I served it with lauki or bottle gourd parathas.
