Soya Cutlets
Soya granules or soya chunks are good source of protein and hence quite beneficial for vegetarians. It is also rich in fibre, thereby helping in reducing the cholesterol level of blood. Moreover it helps in reducing the risk of osteoporosis in women. Soy milk, tofu are excellent for people who are lactoseintolerant. This is a simple, vegan and healthy cutlet which can be an excellent snack or can be served as a starter. It pairs well with a mint curd dip or coriander chutney. You can add boiled potatoes for the binding. But I have used boiled raw bananas instead of potatoes. Another option is to add boiled green peas or boiled corn for an added crunch, colour and bite. If you don’t have soy granules, soak soya chunks in hot water for some time and then pulse it in a blender till it’s granular. Try baking it in a preheated oven at around 180-200 degree Celsius for 20-25 minutes. Besides shallow frying them, you can also deep fry these in medium hot oil. Ingredients:
- Soya granules 1 cup
- Raw banana 1 big
- Salt to taste
- Onion 1 small
- Green chilies 1-2
- Turmeric powder 1/2 tsp
- Red chili powder 1 tsp
- Coriander powder 1 tsp
- Chat masala 1 tsp
- Cumin seeds 1/2 tsp
- Refined oil 2-3 tbsp
- Bread slice 1-2
- Coriander leaves 3-4 sprigs
Method:
- Soak a cup of soya granules in hot water for around half an hour. Strain the water and remove the excess water from it.
- Chop the onion, green chilies and ginger finely.
- Meanwhile steam a raw plantain till it is fully cooked and soft. Remove the peel and mash it well or grate it finely.
- Heat a spoon of oil in a pan and add some cumin seeds. Now add finely chopped onion, green chilies and ginger.
- Add salt and the spices and cook for a minute.
- Now add the drained soya granules and cook for 2-3 minutes.
- Garnish with finely chopped coriander leaves and allow it to cool well.
- Add the cooled mixture into a bowl containing the mashed plantain.
- Mix well. Pulse the bread slices in a mixer and add it to the mixture till you get a dough of proper consistency.
- Make small balls of it and refrigerate the cutlets for atleast half an hour.
- Heat oil in a flat pan or skillet and fry these cutlets till it is golden on both sides.
- Serve it hot with any chutney or dip or sauce.
