Potato flour
Last month my brother gifted me with a pullman loaf tin. Since then I have been browsing lot of blogs to get the perfect brick like squarish sandwich slices. The one thing I noticed in most of the recipes was the usage of potato flour. I could have used freshly mashed potato like I have used earlier in my breads, but I didn’t want to take the risk of playing around with the weights of ingredients in my first trial of using my Pullman loaf tin. I know that we do not get potato flour that easily in our place, isn’t it? And even if we get it in some gourmet shop or online, then I am sure it is going to be quite expensive. So, the only option left with me was to try to make it at home. And as most of the times, Akila Subramanian’s blog morphyandme.com came to my rescue. Her blog is a real treasure of innovations and creations. Its such a simple task to make it at home, especially in a place like Chennai where sunlight and heat is in abundance 🙂
All that you need is couple of good potatoes, a slicer and a clean towel/cloth to dry them and not to forget a good mixer to grind it into a fine powder.
Ingredients:
- Potatoes 1/2 kg
Method:
- Wash the potatoes and remove the skin. Keep it in water for 5 minutes.
- Take a potato chips/wafer slicer and slice these potatoes as thin as you can in a bowl full of water.
- Spread it on a clean towel or cloth and allow it to dry in sunlight.
- When it is fully dried ( it will look crisp and will crumble when you crush them in your fingers ), put it in a clean and dry mixer jar and grind it into a fine powder.
- Store the potato flour in a dry airtight container and use it in your baked products.
Notes:
- You can choose to refrigerate the powder for a longer shelf life.
- With half a kilogram of potato, I got around 6 heaped tablespoons of potato flour.
- You can use it in your whole wheat breads to make it more soft and flavourful.
- It took around for the potatoes to dry fully. Keep on flipping the slices every 2 hours or so, to prevent it from sticking to the surface of the cloth.
- You can bake the potato slices at say 120-130 degree celsius till it is crisp. Say for about 15-20 minutes or more.
