Wheat Oats Cranberry Jaggery Cookies
Try these jaggery based cookies with the goodness of oats and whole wheat with tangy dried cranberries, orange zest and orange extract.
Ingredients:
- Whole wheat flour 125 gm (1 cup)
- Oats 50 gm
- Salt a pinch
- Orange zest 1/2 tsp
- Orange extract 1/2 tsp
- Jaggery syrup 3 tbsp
- Butter 60-70 gm
- Cranberries 1/4 cup
- Baking powder 1/4 tsp
- Baking soda 1/4 tsp
Method:
- Mix the flour, oats, salt and rising agents well with a whisk or spatula.
- Cream the butter and jaggery syrup till its soft and creamy, using an electric beater or a whisk or by simply using your palms.
- Chop the cranberries into small pieces.
- Add orange extract, orange zest and the dry ingredients to the butter and jaggery mixture and mix well.
- Combine to form a dough. No need to knead the dough.
- Shape the dough as desired and place them on a tray lined with parchment paper.
- Bake them in a preheated oven at 160 degree Celsius for 15-16 minutes.
- Remove from oven and allow it to rest on the tray for 3-4 minutes more.
- Cool the baked cookies on a wire rack and store them in an airtight containers.
- Serve with tea/coffee or a cup of cold milk.
- You get around 18-20 cookies with the above mentioned measurements.
