Whole Wheat Coconut Cookies
Coconut cookies and that too home made with whole wheat flour!! Doesn’t that sound interesting and delicious? It is quite crunchy and healthy too. Here is a simple yet tasty recipe….
Ingredients:
- Whole wheat flour 125 gm
- Butter 75 -80 gm
- Dessicated coconut 70-75 gm
- Cane sugar 3-4 tbsp or more
- Cardamom powder 1/2 tsp
- Milk 1-2 tbsp optional
- 2-3 cherries for garnish
Method:
- Cream the butter and sugar till it is light and creamy.
- Add cardamom powder, whole wheat flour and the dessicated coconut (keep aside 1-2 tablespoon for coating) and bring it together. Add some milk if the mixture is too dry.
- Roll into balls and coat it with some coconut. Decorate each cookie with a cherry piece.
- Bake it in a preheated oven at 160 degree celsius for 18-20 minutes.
- Remove from the oven and cool them on a wire rack.
- Store them in airtight containers.
Notes:
- Cane sugar can be replaced by normal sugar. You can even try it with jaggery syrup or jaggery powder. Coconut and jaggery is a wonderful combination.
- If you do not have dessicated coconut, use fresh grated coconut. You can even dry roast the grated coconut for 3-4 minutes.

It’s unrefined sugar obtained from sugar cane. You can replace it with normal sugar or brown sugar
If v use brown sugar how much v ve to use ??
Same quantity. Little difference here and there is fine. Please feel free to add more or less sugar according to your sweet preference
As mentioned by u that cane sugar can be replaced by jaggery pwd n that case what would be the measurement of jaggery pwd
Little less than cane Sugar. Use an approximation
Can I use pure ghee instead of butter
You can try. I use butter for all Cookies other than nankhatai

Do the cookies have to be flattened after rollong into balls or do they flatten while baking? Mine have not flattened and the baked cookies also look like coconut balls
Flatten a bit before baking. It won’t flatten much during baking because there is no rising agent
