Fried Doughnuts
My first experiment on making doughnuts. Made these to take it to my in law’s place for a family get together. I made small sized doughnuts and got almost 24 doughnuts from 200 gm flour.
Ingredients:
For the dough:
- Maida 200 gm ~ 1.5 cups
- Instant yeast 1/4 tsp or slightly more
- Salt a pinch
- Sugar 1 tbsp
- Curd 1 tbsp
- Butter 1 tbsp
- Warm Milk 125 ml or as reqd
- Lukewarm water 25-30 ml
For the glaze :
- Dark chocolate 100gm
- White chocolate 100 gm
- Fresh cream 200ml
- Sprinklers as required
Method:
How to make the doughnut:
- Dissolve the yeast in lukewarm water, add sugar and mix well. Keep it aside till the mixture is frothy.
- Mix the flour, salt and curd till everything is mixed well. Add the yeast mixture to the flour and stir. Knead for 6-7 minutes and make a smooth soft elastic dough using the warm milk and butter.
- Keep it aside in a nicely oiled bowl and cover the bowl with a cling film or a kitchen towel and keep it in a warm dry place for it to double in size.
- When the dough has doubled in size, punch it down and knead for a minute.
- Roll into a thick disk of approximately 1/4 th inch or 1 cm thickness. Use a doughnut cutter or a cookie cutter or a glass cut into rounds. Using a smaller cutter ( I used the base of piping nozzle ), cut out the central part as in doughnuts.
- Keep these on a butter paper or a parchment paper dusted with flour and apply some oil on top ( to prevent drying ).
- Allow it to rise for 30 minutes or till it is nicely puffed up.
- Heat oil in a heavy bottom kadhai and slowly lift these doughnuts and fry them in low to medium heat and drain on an absorbent paper. Do not put too many dough nuts at a time, this will reduce the temperature of the oil.
- Dip it in the glaze and top it with sprinklers. Enjoy it warm.
For the glaze:
- Warm up 100 ml fresh cream and pour it over 100 gm dark chocolate pieces which are cut into small pieces.
- Mix well till its smooth and lump free. Repeat the same for white chocolate ganache.
Notes:
- Instead of frying, these doughnuts can be baked at 180 degree Celsius in a preheated oven for 15-20 minutes.
- Can use 1:1 maida and whole wheat flour and try baking them.
- I feel that these doughnuts are no doubt very tasty, but its a bit oily. When I warmed it in a microwave ( after refrigerating it overnight ), it looked a tad bit oily.
- These are very mildly sweet and one can easily eat one full doughnut.
- You can use any sprinklers for topping. Can even cut the doughnut horizontally and fill it with chocolate or cream. Use your imagination and create different beauties. Can dip your hot doughnut in a mixture of powdered sugar and cinnamon too.
- If you don’t have chocolate at home, still you can enjoy chocolate doughnuts at home.
Simply make a smooth solution using icing sugar, cocoa powder and little milk. Dip your doughnuts in it and enjoy - You can fill a piping bag with the left over ganache after it has cooled and become slightly thick and make patterns on the choco dipped doughnuts.
