Chicken pepper fry
This a fairly simple and easy to make chicken recipe, with the strong flavours of freshly crushed black peppers and green chillies. It is an excellent accompaniment with steamed rice.
Ingredients:
- Chicken 250 gm
- Onion 1 big
- Garlic 5-6 cloves
- Green chillies 2-3
- Curry leaves 2-3 sprigs
- Salt to taste
- Turmeric powder 1/2 tsp
- Oil 1 tbsp
- Pepper corns 10-12 or as required
- Capsicum 1 small
- Tomato 1 medium
Method:
- Wash and clean the chicken pieces well and marinate it with turmeric powder and little pepper powder for atleast half an hour.
- Slice the onions and slit the green chillies. Peel the garlic and chop the capsicum and tomato into cubes.
- Pressure the chicken pieces with little salt and half of the onion slices and garlic pods till one whistle.
- Heat oil in a heavy kadhai or non stick pan and add the onions, green chillies and curry leaves.
- Saute till they turn soft. Now add the cooked chicken pieces and mix well.
- Add the capsicum, tomato and crushed black pepper and adjust salt.
- Just mix everything well. Garnish with some more curry leaves and serve hot with steamed rice.
Notes:
- You can add chilli powder, coriander powder and other spices if you choose to.
- To make it more flavourful, you can add chopped coconut pieces or add 2 tablespoons of thick coconut milk.
