Lentil Moringa Soup
Hello all. Hope you all are doing fine. I had hoped that 2024 will see me doing justice to the blog and add recipes to it, but it looks like God has other plans. I have been so busy the past three months that I completely forgot that I had a blog to maintain. If not add new recipes, I had hoped to publish those half done ones lying in the draft folder since ages. But I guess everything will have to wait for some more time.
Shifting cities are not very easy, especially if you have been living in the same city for more than twenty years. The earlier three months of the year went into the shifting process. Now when we are almost settled in the new place, some health issues have cropped up leaving me not in a position to spend too much time standing. I have always been anaemic since childhood. So, I thought why not share an iron rich soup for you all. It’s extremely easy to cook up and it tastes delicious too. And I have started having this a couple of times in a week.
As always, I have used a 240 ml cup. You can eyeball the quantity of ingredients and make changes as per your preferences.
Ingredients:
- Drumstick 1
- Red lentils 1/4 cup
- Salt to taste
- Onion 1
- Tomatoes 2
- Ginger 1 inch piece
- Garlic 2-3 cloves
- Pepper powder to taste
- Shallots 4-5 (optional)
- Ghee 2 tsp (optional)
Method:
- Wash the lentils thoroughly and soak for half an hour if you have time or else can use directly after washing.
- Chop the onion and tomatoes roughly. Peel the drumstick and chop it into 2 inch pieces.
- In a pressure cooker, add the onion, tomatoes, ginger, garlic, drumstick and lentils.
- Pour 2 cups of water and bring it to a boil. Pressure cook for 2-3 whistles and switch off the flame.
- Strain the cooked vegetables and collect the puree in a sauce pan.
- Add salt to taste and pour water to adjust the consistency. Simmer on low flame for 4-5 minutes.
- Sprinkle pepper powder and serve hot.
- Alternatively, add ghee in a tadka pan and saute finely chopped shallots and drizzle on top of the soup. Enjoy.
