Drumstick clear soup
Not a big fan of creamy thick soups? Well, then this recipe is perfect for you. The other soup that I have shared is a creamy one using drumstick and lentils. Each tastes good in its own way. The choice is yours 🙂
As you all know drumsticks are a powerhouse of vitamins. It’s a rich source of vitamin C, vitamin B6, riboflavin, iron and full of dietary fibre, potassium, magnesium and manganese. Regular addition of drumsticks in the diet is well-known to control diabetes and high blood pressure, it fortifies the bone, improves skin health etc. Make sure you use fresh and tender ones. They are more succulent than hard dry ones. Using vegetable stock instead of plain water will enhance the taste and nutritional value. Please do try and do not forget to share your feedback with me.
Ingredients:
- Drumstick 1
- Bottle gourd a small piece
- Onion 1
- Tomato 1
- Carrot 1
- Pepper corns few
- Oil 2 tsp
- Salt to taste
- Pepper powder to taste
- Cumin seeds 1/2 tsp
- Cinnamon a small piece
- Cloves 2-3
- Bay leaf 1
- Water as required
- Coriander/mint leaves for garnish
Method:
- Peel and chop the bottle gourd and drumstick. Slice the onion, tomato and carrot.
- Heat oil in a pressure cooker and add cumin seeds. When they splutter add the bay leaf, cinnamon, pepper corns and cloves.
- Now add the sliced onion and saute for a minute.
- Furthermore, add the rest of the vegetables and stir for 2 minutes.
- Add water or vegetable stock and cook till 2-3 whistles. Switch off the flame and allow it to cool.
- Strain the soup and simmer the clear soup for 2-3 minutes.
- Add salt and pepper powder according to your taste.
- Garnish with finely chopped coriander and or mint leaves and serve it hot.
