Watermelon Rind Raita
Who doesn’t like a nice thick n creamy raita? I am sure a raita pairs very well with a simple menu of steamed rice and dal or any kind of roti subzi or a stuffed paratha. On top of it, if it’s made with something that we usually throw or discard, then the excitement n fun is every more 🙂 What do we generally do after scooping out the red flesh of watermelon? Don’t we just throw the rind? Well, dont do it henceforth. It can be used as s substitute for white pumpkin or raw papaya.
You can churn out amazing raitas, mor koottan or add it in sambar or other curries. Once I had even made some tootifrooti using these watermelon rind, which is otherwise made with raw papaya. I shall surely post the recipe when I make it next time. Meanwhile, here is a simple and easy peasy recipe of watermelon rind raita. You can make this in under five minutes. My cup size is 240 ml. Ingredients:
- Grated water melon rind 1 cup
- Salt to taste
- Red chili flakes as required
- Thick curd 1-1.5 cups
- Oil a tsp
- Mustard seeds 1/2 tsp
- Curry leaves few
Method:
- Grate the water melon rind (after peeling off the skin).
- Squeeze out the extra water.
- Transfer it into a bowl.
- Take a cup of thick curd and whisk it well.
- Pour this into the bowl of grated watermelon rind and mix well.
- Heat oil in a small kadhai and add the mustard seeds. When they splutter, add curry leaves and chili flakes.
- Pour this into the curd mixture.
- Cool and serve with steamed rice, pulav, rotis or parathas.
