French Fries
I had typed this recipe more than two years back. But somehow couldn’t take pictures then and infact till now. Yesterday I made some french fries for Neha along with her favourite burger 🙂 But still couldn’t click decent pictures of the fries. But Neha said it was the best !! For almost all kids, I am sure this is one of the most sought after snack. So why not make perfect ones at home. I am sure many of you would be an expert in making perfect French fries at home. But some of us would
have experienced the fries getting soggy after a while, isn’t it? Well, there are many techniques to perfect this simple snack. One way is by parboiling the potato fingers and then frying it in hot oil. Another way is to double fry the fingers.
Ingredients:
- Big size potatoes 2-3
- Salt
- Oil for frying
Method:
- Peel and wash the potatoes and soak it in a bowl of water.
- Trim the ends and cut into equal size fingers using a slicer or cut it with a knife.
- Soak the potato pieces in a big bowl of water and keep the bowl in the refrigerator for 4-5 hours or overnight.
- Take the bowl out of the fridge and drain the potato pieces. Dry it completely using a clean towel.
- Take oil in a kadhai or pan and bring it to a boil. Drop few potato pieces into the hot oil and fry them till it is half done approximately for 3 minutes or so.
- Remove from oil and drain on a wire rack. Repeat for the entire pieces.
- After the whole set is half fried, again heat up the oil and fry the half fried pieces in the hot oil once again till it is golden and crispy.
- Remove from the oil and drain on a wire rack. Sprinkle salt and other spices of your choice.
- Super crispy french fries are ready to be served.
Notes:
- Select potatoes with lesser starch content for better fries.
- Don’t drain the fries on an absorbent tissue, the base tend to get soggy. It is better to place on a cooling wire rack.
- Double frying ensures crisper and perfect fries.
- Serve it with tomato sauce along with burgers if you plan to bake them 🙂
