Spinach-Paneer Quinoa
Another quinoa recipe in my kitty 🙂 When your health freak hubby wants a protein rich diet and is keen on having home made food for every meal, you ought to be creative 🙂 So these days I experiment with quinoa, various millets, barley, corn, oats and other grains. The best part is that these grains are quite versatile apart from being healthy, protein rich, fibre rich
and nutritious. These can be an ideal substituent for rice in most rice based recipes. All you need is to be a bit creative and ready to experiment.

Ingredients:
- Cooked quinoa 1 cup
- Salt to taste
- Onion 1
- Spinach a small bunch
- Paneer 50-100 gm
- Tomato 1
- Green chilies 1-2
- Garlic cloves 1-2
- Mushroom 2-3
- Ginger a small piece
- Turmeric powder a pinch
- Red chili powder a pinch
- Cumin seeds 1/2 tsp
- Oil 2 tsp
Method oi green chilies and tomato. Chop the garlic and ginger finely.
- Heat oil in a pan and add the cumin seeds.
- When it crackles, add the sliced onion, mushroom, green chilies, ginger and garlic.
- Once they turn translucent, add the spinach leaves and tomato.
- Cook for 2-3 minutes. Now add salt to taste, turmeric powder and red chili powder.
- When the raw smell of the spices go off, add the cooked quinoa and toss gently.
- Finally, add chopped paneer and mix everything gently.
- Serve it hot with chilled raita and salad.
