Quinoa Uthappam
In a mood to try another protein rich diet? Well, here is a super healthy quinoa uthappam for those who are conscious of what they eat and want to add some protein to their diet. If you are okay to have some rice in your meal, you may add half portion of quinoa and half portion of rice. And as mentioned earlier, you need to get used go these tastes. I can assure you
that once you get the hang of these stuffs, you would like it and enjoy these as much as you like the normal rice uthappam 🙂

Ingredients:
- Quinoa 1/2 cup
- Urad dal 1 tbsp
- Chana dal 1 tbsp
- Salt to taste
- Onion 1
- Green chilies 1-2
- Grated carrot 3-4 tbsp (optional)
- Curry leaves few
- Coriander leaves handful
- Oil as required
Method:
- Wash the quinoa, urad dal and chana dal thoroughly and soak it for an hour or two.
- Grind it into a fine paste.
- Allow it to rest for an hour or two.
- Chop the onion, green chilies, coriander leaves and tomatoes finely.
- Heat a tawa or skillet and pour a ladle of batter into it. Spread it into a thick dosa.
- Sprinkle the chopped veggies and drizzle oil on the sides.
- Cook on medium flame for 2-3 minutes. Flip and cook the other side.
- Serve it hot with a chutney of your choice.
