Millet Upma
I have already posted few recipes using millets. We are really blessed to have so many varieties of millets easily available in our market. Each millet varies from the other in terms of the amount of protein, iron, calcium it contains. Honestly speaking, I fail to understand the difference between fox tail millet, kodo
millet, barnyard millet and little millet. Ofcourse, its easy to identify finger millet, pearl millet and sorghum by its distinct colour, size and shape. So you may use any of the millets like fox tail millet, kodo millet, barnyard millet and little millet to make the below recipe. The cooking time would remain almost the same.
I have used a 240 ml cup. It’s always advisable to soak the millets for atleast an hour or two before cooking. To cook a cup of raw millets, you would need around two cups plus a few tablespoons of water depending on the nature of your millets. You can add or omit any of the vegetables mentioned here. I have used barnyard millets in this recipe. You can buy these millets from amazon.in
Ingredients:
- Millets 1/2 cup
- Salt to taste
- Onion 1
- Carrot 1 small
- Beans 6-7
- Capsicum half
- Tomato 1
- Green chilies 2
- Ginger a small piece
- Curry leaves handful
- Coriander leaves for garnish
- Oil 2 tsp
- Mustard seeds 1/4 tsp
- Urad dal 1 tsp
- Cashew nuts 5-6
- Ghee 1 tsp
Method:
- Waah and soak the millets in one cup water for 1-2 hours.
- Chop the onion, carrot, beans, green chilies, ginger, capsicum and tomato finely.
- Heat oil in a kadhai and add the mustard seeds. When they crackle, add urad dal, cashew nuts and curry leaves.
- Add all the chopped vegetables except tomato and capsicum and saute for 3-4 minutes.
- Drain and add the soaked millets and roast for a minute.
- Add the drained water and salt to taste.
- Bring it to a boil, cover and cook on low flame for 10-12 minutes.
- Please check after 8-9 minutes and add 1-2 tablespoons of water of required.
- Switch off the flame and garnish with finely chopped coriander leaves.
- Serve with chilled curd or raita.
