Elephant foot Yam Cutlets
Elephantfoot Yams contain high carbohydrate, protein, vitamins, antioxidants, minerals, and dietary fibers. Ingredients:
- Yam 250 gm
- Salt to taste
- Onion 1 small
- Green chilies 2
- Red chili powder 1 tsp
- Aamchur 1 tsp
- Chat masala 1 tsp
- Chopped coriander leaves 2 tbsp
- Dry bread crumbs as required
- Oil for shallow frying
Method:
- Peel the skin of the yam and wash it thoroughly.
- Cut it roughly into big chunks and cook it with some salt and water.
- Once the yam pieces are almost cooked and tender, drain the water and keep aside.
- Grate the Yam into a big mixing bowl.
- Add finely chopped onion, green chilies, coriander leaves, salt, red chili powder, chat masala and aamchur powder.
- Mix everything to form a dough.
- Take big lime size balls of the dough and keep them aside. I got balls from the above measurements.
- Sprinkle the breadcrumbs on a flat plate and take some water in a small bowl.
- Wet your hands and flatten each ball into a smooth patty and coat it completely with the bread crumbs.
- Repeat with the remaining balls and refrigerate these for atleast half an hour.
- Heat around a tablespoon of oil in a grill pan or an iron skillet and slowly place these pattice on the pan.
- Drizzle some more oil on the top. Flip the side after 2-3 minutes and cook the other side too.
- Cook till both sides are crisp and golden in colour.
- Remove from the pan and serve it hot with a dip or chutney of your sauce.
