Capsicum Cheese Paratha
I love to make parathas and enjoy experimenting with various stuffings. The ease of making, having less dishes to wash, no botheration of a separate curry, definitely makes it a favourite among home makers. The biggest task is always the decision of what to make than
the actual cooking. So, on those days when your vegetable tray is almost empty and you are confused about what to make for breakfast or dinner, try making such simple stuffed parathas with minimal ingredients easily available in your kitchen. You can add grated mozzarella, cheddar or processed cheese. Since I didnt have any of the above, I have used cheese slices.
Feel free to add or omit ingredients. You can add oregano, thyme and other Italian herbs. Serve it hot with curd or raita. You can check out many other stuffed parathas by clicking here.
Ingredients:
- Wheat flour 2 cups
- Salt to taste
- Onion 1 big
- Capsicum 1 big
- Chili flakes to taste
- Oregano to taste
- Refined oil as required
Method:
- Knead the wheat flour with some salt into a semistiff dough. Cover the dough and allow it to rest for atleast half an hour.
- Chop the onion and capsicum finely.
- Heat a teaspoon of oil in a pan and add the chopped onion.
- When they are sauteed for a while, add the capsicum, onion and red chili flakes.
- Cook on high flame for 3-4 minutes till the mixture looks a bit dry. Sprinkle oregano to taste.
- Remove from fire and allow it to cool.
- Take big lime sized ball of the dough and flatten it in your palm.
- Apply little oil on the flattened dough.
- Sprinkle a generous amount of the onion-capsicum mixture into the dough and seal it tightly.
- Dust it with flour generously and roll into a medium thick paratha of around 7-8 inches diameter.
- Repeat with the remaining dough.
- Meanwhile, heat an iron skillet and place the rolled paratha on it.
- Flip it after a minute and drizzle oil on top.
- Cook till both sides are golden in colour.
- Transfer onto a serving plate and serve it hot with a raita of your choice.
Notes:
- A small tip: if you feel that the stuffing is a bit soggy and moist than desired, the sprinkle a spoon of bread crumbs into it. The bread crumbs will absorb the extra moisture and the mixture will be easy to stuff and roll.
