Barley Oats Banana Bars
I really get fascinated whenever I see any kind of energy bar. No, no not for me 🙂 I love to make it for hubby so that he can have it after his jog. Just hoping that he likes these experimentations. This time I have made this for my sister. This is a zero sugar recipe. No, I am not claiming that this is a diabetic friendly recipe. It has a good amount of dates. The recipe
contains very little butter. You may skip the butter and add some peanut butter instead. Feel free to add raisins, flaxseeds, chia seeds or any other nuts or seeds of your choice.
Ingredients:
- Oats 100 gm
- Barley flakes 50 gm
- Bananas 2
- Pumpkin seeds 2 tbsp
- Melon seeds 2 tbsp
- Walnuts 10-12
- Almonds 20
- Dates 100 gm
- Cranberries 2-3 tbsp
- Butter 1-2 tbsp
- Honey 2 tbsp
- Water 1-2 tbsp
- Cinnamon powder 1/2 tsp (or)
- Vanilla extract 1/2 tsp
Method:
- Dry roast the almonds, walnuts, melon seeds and pumpkin seeds.
- Chop the almonds and walnuts finely.
- Now roast the oats and barley flakes for 3-4 minutes.
- Melt the butter, make a puree of the dates and add it to the butter. You can add 1-2 tbsp of water.
- Puree the banana and add it to the butter mixture. Once it’s cooked, switch off the flame and add honey and vanilla extract.
- Take an 8×8 square cake tin or a rectangular cake tin and line it with a parchment paper such that the extra paper hang on the sides.
- Preheat the oven at around 160-170 degree Celsius for around 10 minutes.
- Add the roasted oats and barley flakes to the butter mixture and mix well.
- Now add the chopped nuts and seeds and mix.
- Transfer this mixture into the prepared cake tin and press it firmly with a spatula.
- Bake it for 20-25 minutes and remove the tin from the oven.
- Make cuts on it while it’s still warm. You can use a sharp knife or your steel bench scrapper.
- Cool it completely and store in airtight containers.
- Refrigerate it if weather is warm and humid.

Looks so yummy…. What is the shelf life of these bars when kept in room temperature?
Please refrigerate it as it contains banana. 2-3 days at room temperature at a cooler place
