Avocado Mayonnaise
Avocado is botanically a berry with a big single seed. Its grown in regions with tropical and Mediterranean climate. The fruit is quite fleshy with a subtle flavour. It’s not sweet, but has a very creamy texture. It’s used to make smoothies, icecream, milk shakes, cakes and salads. The most popular recipe is the Mexican guacamole. It has a very high fat content in it and hence used as a meat substitute in sandwiches and salads. It gets
oxidised when exposed to air and hence lime juice or vinegar is added to it to reduce the black discoloration.
It’s a good source of vitamin B, C, K, and Potassium. In addition to this, they are rich in fibre and helps to lower blood cholesterol and triglycerides. Moreover, it’s loaded with heart healthy mono saturated fatty acids. They are rich in powerful antioxidants which protect our eyes. So, definitely a very healthy fruit. Below is a simple n easy recipe with very few ingredients. A very healthy substitute of the regular mayonnaise which is loaded with oil. The texture is very very creamy. Infact it tastes quite delicious too. Perfect for your burgers and sandwiches and salad dressing too. Please do try it. You may add chili flakes or pepper or mustard paste for added flavour.
Ingredients:
- Ripe avocado half
- Salt to taste
- Apple cider vinegar 1 tsp
- Olive oil 2 tsp
- Warm water 2-3 tbsp
- Garlic clove 1
Method:
- Cut a ripe avocado into half and scoop out the pulp.
- Put it in a blender and make a fine puree. I removed around two tablespoons aside to make a butterfruit milk shake for hubby.
- In the remaining puree, add salt to taste, olive oil, finely chopped garlic and blend again.
- Add water water and blend for few more seconds till you get a smooth creamy texture.
- Store in clean airtight glass jar inside the refrigerator. Should last for few days. I shall update the shelf life in few days.
- Use it as a salad dressing or on your burger buns or sandwiches.
