Corn Cutlets
Another shallow fried cutlets in this category 🙂 Don’t we all enjoy a couple of hot cutlets with our evening cuppa? I am sure we all do. Cutlets are a big time favourite with folks at home. Neha and hubby enjoys it very much and this inspires me to try various ingredients and flavours. Here is a fairly simple and quick recipe. All you need is a corn cob and few boiled potatoes. Feel free to substitute potatoes with mashed sweet potatoes or
raw plantain. Add spices that are readily available in your kitchen. You may try baking these at around 170-180 degree Celsius for around half an hour or so. Ofcourse, the deep fried version is going to taste the best 🙂
I have shallow fried these and I can assure you that it tastes as good as the deep-fried ones. I prefer not to add cornflour or all purpose flour for binding. Remember not to grind the corn kernels into a smooth paste. Just pulse it in a mixer for 1-2 seconds. It will taste best with mint chutney or coriander chutney.
Ingredients:
- Boiled potatoes 2
- Fresh corn 1
- Onion 1
- Salt to taste
- Red chili flakes 1 tsp
- Coriander powder 1 tsp
- Chat masala 1 tsp
- Mint leaves handful
- Fresh Bread crumbs as required
- Dried bread crumbs 2 tbsp
- Refined oil 2-3 tbsp
Method:
- Remove the corn kernels from the cob.
- Cook it with little water and salt till it’s tender. Drain the water and keep aside.
- Peel and mash the boiled potatoes.
- Pulse the corn kernels in a mixer for a second. Do not make a paste.
- Add this to the mashed potatoes.
- Now add salt, one finely chopped onon, mint leaves, red chili flakes, coriander powder and chat masala and mix well.
- Add fresh bread crumbs around 2-3 tablespoon or more and knead ito a soft dough. If it’s too sticky add some more bread crumbs.
- Shape into round or oval tikkis and coat them with dried bread crumbs.
- Refrigerate it for around 15-20 minutes.
- Heat around 2-3 tablespoon of oil in a grill pan or any flat pan and shallow fry these till they are golden on both sides.
- Serve it hot with any dip or chutney of your choice.
