Carrot Raita
Carrots are one of the most healthiest root vegetable. It’s a rich source of vitamin K1, dietary fibre, potassium, antioxidants and beta carotene. It aids in weight loss, reduce the cholesterol levels of blood and improves eye health. Carrots can be added in soups, salads and many other vegetarian dishes. I am sure many of us are great fans of the yummy carrot halwa. Isn’t it difficult to curb the temptation of devouring a bowl of steaming hot carrot
halwa with a scoop of vanilla ice cream 🙂 I bet it is. Anyways… Here is a simple carrot raita recipe which can be paired with any spicy pulao or biryani. For more raita recipes, you may click here.
Ingredients:
- Carrots 1 big
- Tomato 1 small
- Salt to taste
- Sugar a pinch
- Chat masala a pinch
- Thick fresh curd 1 cups
- Red chili flakes 1/2 tsp
- Chopped coriander leaves 1 tbsp
- Mint leaves 5-6
Method:
- Clean and wash the carrots and grate it.
- Whisk the curd till it’s smooth.
- Puree the tomato in a blender.
- Mix all the ingredients in a big bowl.
- Garnish with finely chopped coriander leaves and mint leaves.
- Serve it chilled with rotis or stuffed parathas or pulao.
