Mushroom Spinach Rice
The biggest challenge for any homemaker is to decide the menu for everyday breakfast, lunch and dinner. Once the menu is decided, cooking is no big deal. Especially if you want to satisfy everyone at home, it becomes a real tough ordeal. If hubby likes a particular dish, then daughter doesn’t like it and vice versa. So on occasions when hubby is out of town, the menu is always what Neha likes. She enjoys all kind of vegetable rice
and relishes it with cold raita. And yes, it’s easy for me too to churn out a rice dish. And if you have some cooked rice in your refrigerator, the job gets even more simple.
Isn’t it easy to make a palak puree mushroom rice than making mushroom palak and rice seperately? All you need is, some precooked long grain basmati rice, a small bunch of spinach/palak and few button mushrooms. And a yummy, moist and flavorful, pretty looking, green coloured rice is ready to be plated. Pair it with a creamy chilled raita and your lunch or dinner is sorted. Ingredients:
- Cooked Basmati rice 2 cups
- Mushroom 10-12
- Spinach a small bunch
- Onion 1
- Garlic 4-5
- Green chilies 2-3
- Salt to taste
- Oil 1 tbsp
- Cumin seeds 1/2 tsp
Method:
- Clean and wash the spinach. Blanch it in boiling water for 3-4 minutes.
- Strain it and transfer it into a bowl of ice cold water.
- Grind it into a smooth paste with the garlic and green chilies.
- Clean the mushroom, cut into quarters and blanch it.
- Slice the onion finely.
- Heat oil in a pan and add the cumin seeds.
- When they crackle, add the sliced onion and saute till transparent.
- Now add the spinach puree and cook for two to three minutes.
- Furthermore, add the blanched mushroom and cook for two minutes. Add salt to taste.
- Toss in the cooked rice and stir gently. Take care not to break the rice grains.
- Sprinkle a tablespoon of water if it looks very dry.
- Serve it hot with a cold raita of your choice.
