Rava Idli
Worried about what to make for breakfast or a light dinner? Then this is an ideal recipe for you. You just require few ingredients and a yummy, healthy and quick meal is ready. Pair it up with coconut chutney or coriander/mint coconut chutney or tomato onion chutney and you are good to go. There is absolutely no hard and fast rules about the veggies used. You can use vegetables of your choice. You can add roasted nuts like cashew nuts and almonds. The recipe uses
very less oil too. I am sure that once you try this recipe, you will prefer to make this instead of normal sooji upma which requires lot of oil and ghee.
Make sure that your batter is neither too thick nor too watery. Always add eno or fruit salt just before pouring the batter into the greased mould. I have used a 240 ml cup. You can skip the green chilies if you are making it for your little ones.
Ingredients:
- Semolina/rava 1 cup
- Salt to taste
- Carrot
- Onion 1
- Green chilies 2-3
- Beans 7-8
- Mustard seeds 1/4 tsp
- Udad dal 1/2 tsp
- Eno 1/4 tsp
- Refined oil 2 tsp
- Ginger 1/2 inch piece
- Curd 1/2 cup
- Water as required
Method:
- Chop the veggies finely. You can add vegetables like carrots, onion, beans, peas, corn, capsicum etc.
- Heat oil in a pan and add mustard seeds and udad dal.
- When they splutter, add the veggies and cook for 2-3 minutes.
- Add the sooji and roast for 4-5 minutes.
- Transfer into a bowl and allow it to cool for 10-15 minutes.
- Add curd to it and mix well.
- Adjust the consistency by adding water and allow the batter to rest for 20-30 minutes.
- Add more water if required. The batter should be thick like the normal idli batter.
- Grease an idli stand and keep it ready.
- Add eno and mix gently. Pour into the prepared idli mould and ste for 10-12 minutes.
- Cool and transfer the idlies using a knife or spoon.
- Serve it hot with coconut chutney or sambar. Enjoy.
