Pumpkin Pachadi/Raita
Hows everyone doing? I have been very irregular in updating my blog these days. The hot weather in Chennai is not at all invigorating to try out new recipes and post them. Also, had been busy with Neha’s vacation, a family trip and so on. I hope to be more regular with posts in the coming days. So, here is a simple and healthy pumpkin Pachadi or raita recipe. It’s a mild curry and goes well with
boiled rice along with some spicy side dish.
Red pumpkin is a very healthy vegetable. It’s a rich source of vitamin A, also has lot of anti oxidants, thereby reducing the risk of chronic diseases. It helps in boosting our immunity and is good for our skin and eyes. The low calorie value of pumpkin makes it ideal to be consumed during any weight loss programme. Ingredients:
- Red pumpkin 200 gm
- Salt to taste
- Turmeric powder 1/2 tsp
- Green chilies 2-3
- Grated coconut 1/2 cup
- Fresh curd 1 cup
- Mustard seeds 1 tsp
- Dried red chilies 1-2
- Curry leaves handful
- Sugar/jaggery 1 tsp
- Fenugreek seeds 7-8
- Refined/Coconut oil 1 tsp
Method:
- Peel the pumpkin and cut them into small cubes.
- Cook the pieces with turmeric and salt till its soft and mushy.
- Meanwhile grind the grated coconut with green chilies into a smooth paste.
- Add half a spoon of mustard seeds and blitz it for few seconds.
- Pour this mixture into the cooked pumpkin.
- Whisk the curd till it’s smooth and add it to the mixture.
- Boil for a minute. Adjust salt and add sugar or jaggery to it to balance out the flavours.
- For the tempering, heat oil in a pan and add mustard seeds to it.
- When they splutter, add dried red chilies, fenugreek seeds and curry leaves.
- Pour this on the pachadi and cover with a lid.
- Serve it with boiled rice.
