Aalu Baingan
My Neha is least fussy when it comes to food. She eats almost all vegetables besides bittergourd and relishes her food. So, actually its quite easy for me to pack her lunch box. All she needs is some subzi and rotis. And brinjal is one of her favourites. So, here is a simple aalu baingan subzi made

Ingredients:
- Brinjal 2-3
- Potatoes 1-2
- Salt to taste
- Onion 1
- Tomato 1
- Turmeric powder 1/2 tsp
- Red chili powder 1-2 tsp
- Refined oil 1-2 tbsp
- Mustard seeds 1/2 tsp
- Curry leaves few
- Coriander leaves for garnish
Method:
- Peel the potatoes and slice them into two inch long wedges.
- Cut the brinjals too in the same manner. Soak them in water for 5-10 minutes.
- Chop the onion and tomato into small pieces.
- Heat oil in an iron kadhai and add mustard seeds to it.
- When they splutter, add onion pieces and curry leaves and saute till the onion pieces are soft.
- Now add the potato and brinjal pieces and mix well.
- Add salt and the dry spice powders and stir.
- Throw in the chopped tomato pieces and mix well.
- Cover and cook on low flame till the vegetables are cooked well.
- Remove the lid and fry them for few minutes.
- Remove from fire and garnish with coriander leaves.
- Serve it hot with rice or rotis.
