Broccoli Quesadillas with Wheat Rotis
Neha prefers a very light breakfast generally before leaving for school. Until last year, I used to give her a bowl of oats and some fruits for breakfast. And I would pack some sandwich, idlis, fruits or upma in her tiffin box for her snacks break. But as she is growing up, she is refusing to carry snacks to school and is ready to take only a lunch box. As a result of this I prefer to give her something nutritional and filling for her breakfast. Another hurdle is that her lunch box is in great demand among her friends
and she hardly gets anything to eat during lunch break. So, on those days when I make her favourite veggies like broccoli, cauliflower, ladies finger etc for her dabba, I give her a chapati before she leaves for school.
But eating regular roti and sabzi is a bit boring, right? So, why don’t we try to make it look interesting and exciting. Here is a simple way to make your kids eat a healthy breakfast without much additional effort from your side. Stuff the subzi between two rotis, sprinkle some cheese and cook till they are crisp. Cut it into wedges and serve it in style 🙂 I am sure your kids would enjoy it and look forward to such a tempting breakfast. You can stuff the rotis with any interesting subzi of your choice. Ingredients:
- Wheat rotis/phulkas
- Broccoli 200 gm
- Paneer 100 gm
- Salt to taste
- Onion 1
- Green chilies 2-3
- Garlic cloves 4-5
- Butter 2 tsp
- Turmeric powder a pinch
- Red chili flakes 1/2 tsp
- Refined oil as required
- Cheese as required
Method:
- Make phulkas in the usual way. You can use the previous day rotis too.
- Cut the broccoli into florets and wash it well.
- Blanch it in boiling water for 4-5 minutes and transfer it into cold water.
- Chop the onion, garlic and green chilies.
- Add butter in a pan and saute the onion, garlic and green chilies.
- When they are translucent, add the broccoli and mix well.
- Season it with turmeric powder, salt and red chili flakes. Cook for 3-4 minutes.
- Now add the paneer cut into small cubes and mix gently.
- Cook for two more minutes. Either serve it hot with rotis or rice.
- Or take a roti and spread this mixture on it generously.
- Sprinkle some grated cheese on top and cover it with another roti. I have used a cheese slice. You can use cheddar or mozzarella or a mix of both.
- Heat an iron skillet and cook the rotis till they are crisp on both sides.
- Drizzle some oil while cooking.
- Cut it into wedges and serve it hot.
