Lauki Chana dal Sabzi
We were traveling to my in-laws place two days back and I was busy the whole day packing, preparing lunch and also making some dinner for our train journey. I wanted to finish off my lauki and at the same time make some simple one pot meal for a simple and quick lunch. What better and simpler than this lauki-chana dal subzi !! It’s a healthy and mildly spiced subzi which
pairs quite well with phulkas or steamed rice. These are perfect during hot summer days.
Ingredients:
- Bottle gourd/lauki 1 small
- Chana dal 1/2 cup
- Salt to taste
- Onion 1
- Tomato 1
- Turmeric powder 1/2 tsp
- Red chili powder 1 tsp
- Refined oil 1 tbsp
- Cumin seeds 1/2 tsp
- Coriander leaves 2-3 sprigs
Method:
- Wash and soak the chana dal for 2 hours.
- Peel and chop the bottle gourd/ lauki into small pieces.
- Slice the onion and tomato into small pieces.
- Heat oil in a pressure cooker or pressure pan and add the cumin seeds.
- When they splutter, add the onion and saute till they are translucent.
- Add the soaked dal, lauki, salt, turmeric and red chili powder. Mix well.
- Add around half a cup of water and pressure cook it till is soft and tender.
- Garnish with finely chopped coriander leaves and serve it hot with rice or phulkas.
