Spring Onion Raita
We all are familiar with the most commonly made onion raita, isn’t it? So, now why don’t we try a bright green coloured spring onion leaves and bulb raita? Perfect for the coming summer months. Serve
it chilled with any paratha or pulao of your choice. Do not forget to add few mint leaves for an added flavour. As always use fresh and thick curd.
Ingredients:
- Spring onion 7-8 stalks
- Mint leaves 8-10
- Salt to taste
- Green chilies 1-2
- Garlic 1-2 cloves (optional)
- Curd 1-1.5 cups
- Sugar a pinch
- Refined oil 1 tsp
- Mustard seeds 1/4 tsp
Method:
- Clean and chop the spring onion bulb and greens.
- Add the spring onion greens, mint leaves, green chilies, salt and garlic in a mixer jar and make a smooth puree.
- Add nice thick curd into this mixture and whisk well and.
- Heat oil in a kadhai and add the mustard seeds. When they splutter, add the chopped onion and a tablespoon of spring onion green and saute for two minutes.
- Add this tempering into the curd mixture.
- Check salt and add a pinch of sugar.
- Garnish with mint leaves and serve it chilled with pulao or parathas.
