Lemon Rice
Rice is definitely a comfort food and every south Indian is going to vouch for it. And if it’s lemon rice, then it becomes even more tummy friendly 🙂 Honestly speaking, folks at my home are not big fans of these kind of variety rice. Neha too prefers to take roti and subzi to school. But once in a week or once in two weeks, I give her some sort of rice. Especially on those days, when my vegetable tray is almost empty, I resort to such recipes. This is a simple without any frills kind of recipe. The best part is, it tastes good even when it’s cold and lasts for 2 days at room temperature. So, it becomes an ideal choice during long train journeys. I remember
my mom making curd rice or lemon rice or tamarind rice during our train journeys from Mumbai to Kerala.
It pairs beautifully with lime pickle or stir fried potatoes or some kind of fryums or pappadam. You can make it protein rich with the addition of roasted peanuts or roasted cashew nuts. Ingredients:
- Cooked basmati rice 1 cup
- Salt to taste
- Lemon juice 1 tbsp
- Asafoetida a pinch
- Green chilies 1-2
- Urad dal 1 tsp
- Chana dal 1 tsp
- Turmeric powder 1/2 tsp
- Curry leaves 2 sprigs
- Peanuts 1-2 tbsp
- Sesame oil 1-2 tbsp
- Ginger a small piece (optional)
- Cashew 4-5 (optional)
- Mustard seeds 1/2 tsp
Method:
- Add some salt and lemon juice to the cooked rice and keep aside.
- Heat oil in an iron kadhai and add mustard seeds.
- When they splutter, add urad, chana dal and curry leaves. Sprinkle asafoetida and slit green chilies.
- Add turmeric powder, roasted peanuts and sprinkle 1-2 tablespoon of water and bring it to a boil.
- Pour this mixture into the rice and toss gently.
- Add finely chopped ginger if desired and garnish with roasted cashew nuts.
- Cover and keep for 5-10 minutes for the rice to absorb the flavours.
- Pack it in your kid’s tiffin box or carry or for long train journeys.
- Enjoy it with some pickle, pappadam or potato stir fry.
- This stays well at room temperature for more than 2 days.
