Spring Onion Paratha
I get excited when I see more and more parathas in my Paratha category. Here is another paratha which is very easy to make and at the same time delicious and quite healthy. Scallions or spring onion is often used in most Indian Chinese dishes, various stir fries, in salads and curries too. As is the case with most of the green veggies, these spring onion greens and bulb are quite rich in vitamin A and iron. It also helps to lower blood
sugar levels, aids in digestion, helps in vision and reduces cancer risk.
This is a very simple recipe, where we knead the dough with the spring onion greens and bulb and make parathas with it. These parathas pair very well with chutneys, raita, pickle or tomato curry. Add any spice of your choice.
Ingredients:
- Whole wheat flour 2 cups
- Spring onion 1 bunch
- Salt to taste
- Refined oil as required
- Turmeric powder 1/4 tsp
- Red chili powder 1/2 tsp
- Sesame seeds 1 tsp
- Coriander leaves 4-5 sprigs
Method:
- Clean, wash and finely chop the spring onion greens and the bulb.
- Heat a teaspoon of oil in a pan and add the chopped spring onion. Add the sesame seeds.
- Saute it for 2-3 minutes. Now add salt, turmeric powder and red chili powder.
- Cook for 2 minutes. Add finely chopped coriander leaves and allow the mixture to cool.
- Transfer the mixture into a big mixing bowl. Add the wheat flour and knead into a medium soft dough.
- Cover the dough with a muslin cloth and allow it to rest for 15-20 minutes.
- Take medium size balls from the dough and roll it into a disc of around 7-8 inches in diameter.
- Heat an iron skillet and cook the parathas to they are golden on both sides. Drizzle oil or ghee while cooking.
- Serve these parathas hot with curd, raita, pickle or tomato curry.
