Veg Kathi Rolls
When we had been to Darjeeling and Kolkata some time back, and we could get a chance to taste some of the authentic Kathi rolls on the famous Palk Street of Kolkata. The taste was just brilliant and the huge crowd in front of the small roadside shop was a proof of it. We had almost given up due to the long wait and hubby was getting really impatient. But after we tasted it, we were really thankful that we didn’t lose our patience and waited to get these. Hubby said he had tastiest one of the most
juiciest and moist chicken rolls. The vegetarian one was also too good.
As it’s almost customary in our home, once we taste something delicious outside, I always try my version of it at home. And what I tried at home was also quite good. For the exact authentic taste, use all purpose flour for the rotis. However, to make it a bit guilt free, I have used a mixture of all purpose flour and whole wheat flour. Ingredients:
For the rolls:
- Whole wheat flour 1 cup
- All purpose flour 1 cup
- Salt to taste
- Refined oil 2 tsp
For the filling:
- Paneer 200 gm
- Onion 1 big
- Tomato 1 big
- Salt to taste
- Turmeric powder 1/2 tsp
- Red chili powder 1 tsp
- Chat masala 1/2 tsp
- Refined oil 1 tbsp
- Coriander leaves 2-3 sprigs
For the salad:
- Cucumber 1
- Onion 1
- Salt to taste
- Chat masala a pinch
Method:
To make the roll:
- Mix the flour and salt well. Add oil and rub it into the flour.
- Add water knead into a soft dough. Allow the dough to rest for few minutes.
To make the filling:
- Chop the onion, tomato, green capsicum, paneer into thin slices.
- Heat oil in a pan and add the chopped onion and saute them.
- Now add the capsicum tomato, salt and other spices and toss well.
- Add the paneer pieces and mix gently.
- Finally garnish it with finely chopped coriander leaves and allow it to cool slightly.
To make the salad:
- Chop the cucumber,onion and green chilies into thin pieces.
To assemble the Kathi rolls:
- Heat the roti again for few seconds.
- Now add the prepared paneer filling on it.
- Sprinkle it with the salad and add chat masala on top.
- Roll it tightly and cook again with a smear of oil till it’s crispy.
- Roll it in parchment paper or butter paper and serve it hot.
- Repeat with the other rotis and make such rolls.
- If desired, you may beat 2 eggs and smear a tablespoon or so on the rotis, flip and cook and then stuff it. Will make your rolls more moist, soft and juicy.
Notes:
- Instead of paneer, you can make a spicy chicken filling or egg masala and stuff it. Repeat the same process.
- Grated cheese can also be added for extra flavour and richness.
