Aalu Methi Paneer
I love winters because we get lot of fresh vegetables and leafy greens like methi quite abundantly. Methi parathas are one of my favourite. Another dish that I usually make with methi leaves is this simple aalu methi recipe. You can add fresh/frozen green peas or bell peppers too to this dish. I love the combination of brinjal and methi leaves too. Another interesting combination
would be methi and ladies finger. Yes, yes it tastes really good. Moreover, it pairs well with moong dal too. I shall update these recipes soon.
Methi leaves like any other leafy vegetables, is a great source of iron. It helps to keep blood sugar in control and balances the lipid profile. These are ideal winter vegetables, so please do not miss out on trying these. Make sure you clean the leaves well and wash it clean. You may very well omit the paneer.
Ingredients:
- Methi leaves 2 cups
- Boiled potatoes 2 big
- Paneer 100 gm
- Salt to taste
- Onion 1 big
- Garlic cloves 3-4
- Tomato 1 medium
- Green chilies 2
- Capsicum 1 small
- Turmeric powder 1/2 tsp
- Red chili powder 1/2 tsp
- Cumin seeds 1/2 tsp
- Mustard seeds 1/2 tsp
- Refined oil 1-2 tbsp
Method:
- Clean and wash the methi leaves and chop it finely.
- Chop the onion, potato and tomato.
- Heat oil in a kadhai and add the mustard seeds.
- When they splutter, add cumin seeds. Now add chopped onion, garlic and green chilies.
- When these are translucent, add potatoes and the spice powders.
- Add salt according to your taste.
- Stir and cook on high flame for few minutes.
- Now add the chopped methi leaves and tomatoes and cook for 3-4 minutes.
- Finally add small cubes of green capsicum and paneer pieces.
- If required garnish with finely chopped coriander leaves and serve it hot with phulkas or dal n rice.
- Or pack it in your kids and hubby’s tiffin box like I did 🙂
Notes:
- Paneer and capsicum are optional.
- You can add a pinch of sugar if you like. Amchur powder or some lime juice will give a nice tangy taste.
