Mixed Veg Paratha
Aren’t parathas one of the most filling and healthy Indian breads? Ofcourse, one has to be a bit careful about the amount of oil/butter/ghee you add in it. I find them quite easy to make and pack them in tiffin box. You just need to be creative and stuff your dough with interesting combination of various vegetables and make different parathas. You can either make a filling and
stuff it or simply knead the flour with finely chopped or grated vegetables of your choice and then make parathas.
Luckily my daughter is ready to try out different parathas, though I cannot say that about my hubby 🙂 I already have managed to add few recipes in the blog and and many friends have encouraged and requested me to add more varieties. This has really motivated me to try out some more. We enjoyed these parathas with some chilled spinach raita, making the meal a healthy balance one with all the required nutrients. I am loving the flavour of mint leaves in my parathas. Please do try some and share your feedback with me.
Ingredients:
- Whole wheat flour
- Salt to taste
- Cabbage grated 1 cup
- Grated carrot 1/2 cup
- Chopped beans 1/4 cup
- Onion 1
- Turmeric powder 1/2 tsp
- Red chili powder 1 tsp
- Amchur powder 1/2 tsp
- Coriander leaves 2-3 sprigs
- Mint leaves handful
- Refined oil as required
Method:
- Place the whole wheat flour into a bowl. Add salt and knead into a soft dough using water. Cover and allow the dough to rest for atleast half an hour.
- Meanwhile grate the cabbage and carrot. Chop the beans and onion very finely.
- Heat oil in a pan and saute the grated and chopped vegetables.
- Add salt and other spices and cook for 4-5 minutes till the mixture looks dry.
- Garnish it with finely chopped coriander and mint leaves.
- Transfer into a plate and allow it to cool well.
- Take lime size balls from the dough and roll into discs of around 4 inch diameter.
- Smear little oil on one side and sprinkle the filling evenly.
- Cover it with another disc and press the edges.
- Dust with flour and roll out again into discs of diameter 7-8 inches.
- Heat an iron tawa or skillet and cook these stuffed parathas till they are golden on both sides. Sprinkle oil while cooking.
- Serve it hot with an raita or chutney or any dip of your choice.
