Orange Cookies
Oranges are in season and the best way for a blogger is to try out various recipes with oranges. Check out my eggless orange cake and orange cupcakes. Want to try making some orange marmalade or candied orange peel? Last week I had tried an orange cranberry yeasted bread and it was absolutely flavourful and moist. After making cakes and breads with oranges it was
time to try out some cookies.
I was pleasantly surprised to see that these orange cookies tasted really yum. Honestly speaking, I was a bit scared of adding orange juice to the cookies thinking that it might make the cookies soggy. But these cookies are really crunchy and crispy. The slight bitter taste of the candied orange peel in each bite is quite exciting. The zest and orange juice definitely peps up the flavour of these orange cookies. Feel free to use all purpose flour instead of whole wheat flour.
Ingredients:
- Whole wheat flour 150 gm
- Milk powder 1 tbsp
- Salt a pinch
- Sugar 75 gm
- Orange marmalade 1 tbsp
- Candied orange peel handful
- Butter 75 gm
- Orange juice 2 tbsp
- Orange zest 1-2 tsp
Method:
- Sieve the flour, milk powder and salt 2 times.
- Powder the sugar in a dry mixer jar.
- Chop the candied orange peel into small pieces.
- Cream the butter and powdered sugar with an electric beater or a wooden ladle kmtill it’s creamy and fluffy.
- Add the marmalade and orange juice and mix well.
- Now add the dry ingredients into this butter mixture and assemble to form a dough.
- Cover the bowl and refrigerate it for atleast half an hour.
- Line a baking tray with parchment paper.
- Roll the dough between 2 layers of parchment paper and cut it into desired shape using a cookie cutter.
- Or simply flatten small balls of the dough and sprinkle some sugar and candied orange peel pieces on top.
- Arrange the cookies on the baking tray and chill again for few minutes.
- Preheat the oven at around 150-160 degree Celsius for atleast 10 minutes.
- Bake the cookies for 18-20 minutes or till it turns golden in colour.
- Remove the tray from the oven and allow it to cool for few minutes.
- Now transfer the cookies onto the cooling rack and cool it completely.
- Store in airtight containers and enjoy with your evening tea or coffee.
