Spinach/Palak Raita
Last weekend, hubby was out of station and it was experiment time for mamma and baby 🙂 Neha enjoys all kind of parathas served with raita. So this time we decided to try some different parathas than the usual aalu, methi, gobi, onion parathas. So we made some mixed vegetable parathas and as an
accompaniment, we made this healthy spinach raita. Stay tuned for the mixed vegetable paratha recipe.
I don’t think I have to list out the health benefits or nutrition value of spinach. You can try recipes of palak-paneer, aalu palak, palak chicken, oil-less palak from the blog. This is a simple, mild recipe with very less oil. Make sure to use fresh thick curd. If you like, you can temper it with mustard seeds and curry leaves. You can even blanch the spinach leaves and then add it to the raita. Try adding the puree for a beautiful green coloured raita.
Ingredients:
- Spinach a small bunch
- Onion 1 small
- Garlic 2 cloves (optional)
- Refined oil 2 tsp
- Salt to taste
- Red chili flakes as reqd
- Cumin seeds 1/4 tsp
- Chat masala a pinch
- Sugar a pinch
- Thick curd 1-2 cups
Method:
- Clean and wash the spinach leaves. Remove the stalk and chop it finely.
- Chop the onion and garlic too.
- Heat oil in a pan and add the cumin seeds. When they splutter add the chopped onion and garlic.
- Now add the spinach leaves and saute on high flame for 4-5 minutes.
- Add salt and red chili flakes.
- Transfer the cooked spinach onto a serving bowl. Allow it to cool.
- Whisk the sugar with salt and a pinch of sugar.
- Add this to the spinach and mix well.
- Sprinkle some red chili flakes and chat masala.
- Serve it with phulkas or parathas. I have served it with mixed vegetable stuffed paratha.
