Golden syrup
Golden syrup as the name suggests is a thick amber or golden coloured syrup made with sugar, water and a piece of lime. Doesn’t this look beautiful? Just look at the colour !! It has a slight caramel flavour and can be used in baking cookies, tarts, cakes and other goodies. It can be poured on pancakes, waffles, toasted bread, French toast and porridge too. It is much lighter than the treacle syrup which is more commonly used in dark Christmas fruit cakes. I have not tasted store bought golden syrup, so I cannot
comment whether home made is better or not. However, I can assure you that it’s fairly easy and absolutely cheap to be made at home.
These golden syrup can be an excellent gifting item during this festive season. Gift it in a cute dessert jar with some bow tied on it and you are sure to impress someone 🙂 Golden syrup looks similar to honey and maple syrup, however it tastes quite different from these two. It’s often used as a vegan substitute to honey. Though corn syrup tastes much different from golden syrup obviously because of the ingredients used to make it, it is used as a substitute to golden syrup.
If stored in well sterilized glass jars in a clean and dry shelf, golden syrup stays fresh for a couple of years. As this was my first trial, I have made a small portion and I am sure this will motivate many of you to try it. Stay tuned to some exciting recipes using this golden syrup. Ingredients:
- Sugar 50 gms (1/4 cup)
- Water 2 tbsp
- Sugar 250 gms (11/4 cup)
- Water 150 ml
- Lime 1/4
Method:
- Measure the sugar separately and keep aside.
- Keep around 150-200 ml of water in a kettle for boiling.
- Take a thick bottom pan and add one fourth cup of sugar to it. Add 2 tablespoon of water and mix.
- Now heat the pan and allow the sugar to dissolve fully. Do not stir. Lightly swirl the pan.
- As the temperature reaches 150 degree Celsius, reduce the fire and slowly add around half cup (120 ml) of boiling water to it. Be very careful while adding water.
- Now slowly add the 250 grams of sugar to it and stir gently.
- You can add around 20-30 ml of more water. Add one fourth of lime and bring it to a boil.
- Now simmer and cover and cook for 30-40 minutes or till you get a nice golden coloured syrup.
- Remove from fire and cool a bit.
- Strain and store in clean and dry sterilized glass bottles at room temperature.
