Dal Palak Soup
I love experimenting with soups, but unfortunately hubby is not too fond of soups. He likes simple clear soups and is not too happy trying out various home made soups. Plus the weather in Chennai never encourages us much to try out soups. However, these days the weather in Chennai is a bit pleasant and that calls
for some occasional soups for dinner.
Now you may call this a soup or a simple dal palak subzi. It’s quite nutritious and healthy. Moreover, you just need few ingredients and very little time to make this. Just cook some moong dal and temper it with finely chopped spinach leaves, onions, green chilies, ginger and garlic. I prefer adding little milk to balance the flavours and make it a bit creamy. You made add a spoon of fresh cream too. The bite of finely chopped ginger pieces in every mouthful is quite refreshing.
Ingredients:
- Moong dal 1/2 cup
- Spinach 10-12 leaves
- Salt to taste
- Onion 1 small
- Green chilies 1-2
- Garlic 3-4 cloves
- Ginger 1 inch piece
- Refined oil 2 tsp
- Cumin seeds 1/4 tsp
- Milk 1/2 cup
Method:
- Clean and wash the spinach leaves. Chop the spinach, onion, ginger, garlic and green chilies finely.
- Cook the moong dal till it’s soft and fully cooked.
- Heat oil in a kadhai and add cumin seeds.
- When they splutter, add the onion, ginger, garlic and green chilies.
- Add the finely chopped spinach leaves and cook for 3-4 minutes.
- Add salt and the cooked dal and bring to a boil. Adjust the consistency.
- Add milk and switch off the flame.
- Serve it hot with your lunch or dinner.
