Bread Burfi
Happy Diwali to all my friends and well wishers. So, I guess most of you are busy making sweets or busy attending to guests and so on. Wishing a very bright and colourful diwali to all. I am quite happy to note that many of you have tried the eggless mawa/khoya cake and have got amazing feedback from all. Thanks to all those who tried them and those who haven’t tried, please do try and share your feedback. This time owing to couple of deaths in our family, we are not
celebrating Diwali. So, I have not made any sweets or cakes this time. After a breakfast of idiyappam and peas curry, I was planning our lunch and I decided to make a Maharashtrian Kolhapuri style vegetarian thali. More on that in the next post.
I had to decide on some simple sweet to be served along with the lunch. I didn’t have mawa or paneer or full fat milk with me. So kalakkand was ruled out. Neha suggested bread Rasmalai and bread gulab jamun. This gave me an idea to try out a burfi with some bread, milk powder, milk and sugar. I had a small piece of semolina bread in my refrigerator. So, I quickly removed the crust and powdered it to form bread crumbs. Added few ingredients and wow! A simple burfi is ready. The best part is hubby loved it 🙂 Please do try this. I haven’t added saffron. You may add it for a beautiful colour and flavour. Any small variation in the proportion of ingredients won’t harm. As this was a jugadoo kind of recipe, I have added things according to availability and convenience. Btw, you can add any bread. I have used 240 ml cup.
Ingredients:
- Bread slices 2
- Sugar 50 gm (1/4 cup)
- Milk 120 ml (1/2 cup)
- Milk powder 1 cup
- Almonds/badam 1/4 cup
- Ghee 1 tbsp
- Cardamom powder 1 tsp
- Saffron strands a pinch (optional)
- Chopped nuts 1 tbsp
Method:
- Chop the almonds and grind them into powder. It needed be too fine. No need to remove the skin.
- Remove the sides of the bread and pulse into a powder using a dry mixer jar.
- Roast the bread crumbs in a pan for 2-3 minutes.
- Keep it aside and in the same pan add some ghee.
- Now add milk and heat it on low flame.
- Add milk powder and stir continuously for 2 minutes. Make sure that there are no lumps.
- Add the sugar and mix well again for 2 minutes.
- Now add the almond powder and mix.
- Add the roasted bread crumbs and cardamom powder and stir. Add the saffron soaked in a spoon of milk.
- Cook till the mixture thickens and leave the sides of the pan.
- Grease an aluminium cake tin or a glass bowl with some ghee.
- Transfer the mixture on to the tin and press it well with a spatula.
- Sprinkle finely chopped nuts on top and press gently.
- Allow it to set for an hour. Slice it with a sharp knife and serve it with love 🙂
