Corn n Bell Peppers Rice
We often have some left over rice with us, dont we? We always end up making sauteing it with some veggies or make some cutlets with it. Try seasoning it and use it as a stuffing in bellpeppers
and grill them. Or simply saute some onion and spices and add the rice and toss it well. Or turn them into a cabbage rice or raw mango rice or mint rice.
Another simple variation of left over rice is given below. Just toss in some fresh boiled corn, add some coloured bell peppers for an added attraction and mix with the rice. It’s that simple, you can make it in a jiffy. Pack it in your kids lunch box.
Ingredients:
- Cooked basmati rice 1 cup
- Boiled corn 1/2 cup
- Bell peppers diced 1/2 cup
- Salt to taste
- Pepper powder to taste
- Green chilies 1-2
- Refined oil 1 tbsp
Method:
- Heat oil in a heavy pan and saute the boiled corn, green chilies and diced bell peppers for 2 minutes.
- Add the cooked rice, salt and pepper powder and toss gently.
- Sprinkle some water and mix well. Cook for a minute
- Garnish with a fresh green chili and serve hot with an accompaniment of your choice.
Notes:
- You may add other vegetables of your choice. Garnish it with fresh spring onion or coriander leaves.
- Its a simple and easy way to re use your left over rice.
