Carrot Soup
Any warm home made soup with a slice of fresh bread is such a comfort food, isn’t it? Well, I simply love this combination. When we were small kids, we would know only one soup, that is Tomato soup. Ofcourse at times, mom used to make some mixed vegetable soup when we were ill and I used to love it. As we grew up and started eating out more, we became aware of other soups. These days I look forward to avenues and
reasons to try out some soup at home. But unfortunately, hubby is not too fond of soups and likes only veg clear soup and chicken clear soup.

The onion and carrot pieces along with the corn kernels gives it a bite in each mouthful. The taste of fresh ginger pieces is indeed very refreshing. Moreover, the carrot and tomato puree gives this soup the much needed body and thickness. Honestly speaking, I never like to thicken my soup using cornflour slurry. The veggie puree does the job most of the time. Another alternative could be to replace the tomato with a cup of orange juice. Carrots and oranges are indeed a wonderful combination. You may add some fresh cream or thick coconut milk too. Garnish it with some fresh coriander leaves or parsley or mint leaves. Especially since now winters are going to set in, so having a collection of various soups to try out is surely going to help some of you. Ingredients:
- Carrots 3
- Onion 1 small
- Tomato 1
- Salt to taste
- Sugar a pinch
- Pepper powder to taste
- Boiled corn 3 tbsp
- Ginger 1 inch piece
- Olive oil 2 tsp
- Coriander leaves 1 sprig
Method:
- Blanch one tomato and a carrot, cut into chunks, and make a smooth puree of it.
- Finely chop 2 carrots, an onion and ginger.
- Heat oil in a sauce pan and add the onion, carrot pieces, corn and ginger.
- Saute till they are soft. Now add 2 cups of vegetable stock or water.
- Cover and cook for few minutes.
- Now add the puree and simmer for few minutes.
- Add required amount of salt and pepper powder. Add a pinch of sugar to balance the flavours.
- Garnish it with coriander leaves or mint leaves or finely chopped parsley and serve it hot.
