Sweet Lime Muffins
Muffins with sweet lime/Mosambi juice? was the first reaction when I told folks at home that I was planning to try today evening. It was daughter’s day and I thought of making something special for Neha. But I never knew that it would taste this good or that it would have such a perfect texture. The most surprising part was my hubby loved it and had
2 big ones at one go. The health benefits of sweet lime are surely known to everyone. No, no I am not saying that having such sweet lime muffins are good for health, especially when it’s made with refined flour. But indulgence once in a while is ok. Also I ensure that we do not go out and eat junk and unhealthy stuffs. So all these not so healthy bakes are purely home made, thereby making it a bit less unhealthy.
Talking about the health aspects of sweet lime: it helps in digestion, relieves constipation, prevents Scurvy and peptic Ulcers. It also aids in solving respiratory problems, improves the Immune System of the body too. It has anti-Cancer Properties, acts as a protection against Rheumatoid Arthritis and so on. So the list is quite big. So, why don’t we just have a look at the list of ingredients. The procedure for most of these cupcakes and muffins are same. I would like to call these muffins because of its size and the texture. I generally prefer not to use liners in my muffins, as I love the nice golden brown I get when I baked these in my wilton muffins mould. Moreover there is no wastage of some part of the muffin getting stuck to the liners.
Ingredients:
- All purpose flour 175 gm
- Salt a pinch
- Brown sugar 100 gm
- Sweet lime juice 60-80 ml (1/4-1/3 cup)
- Oil 60 ml (1/4 cup)
- Lemon extract 1 tsp
- Lemon zest 1 tsp
- Baking powder 1/2 tsp
- Baking soda 1/4 tsp
- Black currants 2 tbsp
Method:
- Preheat the oven at 150-160 degree Celsius for atleast 10 minutes.
- Sieve the flour, salt, baking soda and baking powder 2 times and keep it in a big mixing bowl.
- Add the juice, oil and sugar and mix well with a whisk till the sugar dissolves completely.
- Add lemon extract and lemon zest.
- Now grease your muffin mould with oil.
- Pour the liquid ingredients into the dry ingredients and fold it gently. Add the black currants and mix.
- Pour the batter into the muffin mould till 2/3 rd of its capacity.
- Tap it gently to remove the air bubbles.
- Bake in the preheated oven for 20-25 minutes or till a toothpick inserted into the centre comes out clean.
- Take the mould out of the oven and cool for few minutes.
- Transfer the muffins onto a wire rack and cool.
- Delicious muffins are ready to be devoured.
