No knead Whole Wheat Bread
A bit lazy to knead the dough for 10-12 minutes? Or want to try something fast and you don’t have the patience to wait for two proofings? Worry not…. Here is a simple No-knead whole wheat flour bread. Yes, you heard it right.. absolutely no kneading and straining your elbows. You simply got to mix all the wet and dry ingredients into a shaggy batter, yes yes batter and not the usual dough. Just scoop it out
into a well greased (yes I repeat very very generously greased tin, as there are chances of the bread getting stuck in the tin) bread tin and level it well using wet hands. Now you cover and let it rise till the brim of the tin. Then bake it in a preheated oven for 40-45 minutes.
The resulting bread is a bit dense, but flavourful one. This makes a very good toasted cheese sandwich. Now, if you ask me, will I always make this bread? The answer might not be Yes. Kneaded breads are definitely more softer and tastier and the two round of proofing surely makes the bread more flavourful. But surely when you are hard pressed for time and you have to bake something for the family, I would surely try this again. Atleast it’s 100 times better than store bought breads. Do you all know that I have not bought a single loaf of bread since the day I started baking breads? Now, isn’t that inspiring? Well enough of self praising 🙂
My go-to blog whenever I want to try a different bread is surely King Arthur flour blog. Of course I do make changes to suit our weather conditions and availability of ingredients etc. Most of them use orange juice to camouflage the slightly bitter and earthy flavour of whole wheat flour. Yes and it works like a charm. But I didn’t have oranges not orange juice with me, but instead I had sweet lime (Mosambi/sathukudi) with me. I made a quick juice and got around 1/4 cup (60 ml) juice. Let’s quickly get to the recipe… I have used my 240 ml cup.
Ingredients:
- Whole wheat flour 400 gm
- Salt to taste
- Milk powder 2 tbsp
- Honey 1 tbsp
- Orange/sweet lime juice 1/4 cup
- Milk plus water 1 cup plus 2 tbsp
- Instant yeast 1 tsp heaped
- Olive oil 2-3 tbsp
Method:
- Heat the milk and water till it is lukewarm. You can take 1/2 cup milk and 1/2 cup water. Keep 2-2 tablespoons of water ready with you. You might need it while mixing.
- Mix this with yeast, honey and orange juice.
- Mix the flour, salt and milk powder.
- Now add the dry ingredients into the liquid mixture and beat with a wooden spoon or a mixer.
- Pour oil or melted butter and mix. This will be a wet batter.
- Grease a bread tin generously with oil and scoop the mixture into the tin.
- Level the surface with wet or oiled hands.
- Allow the batter to rise to the brim of the pan. I have used my 9 by 3.5 inches aluminium bread tin.
- Once the batter has risen well, bake it in a preheated oven at 180-200 degree Celsius for around 40-45 minutes or till the internal temperature of the bread shows more than 90 degree Celsius.
- Remove from oven and cool for atleast 5-6 minutes.
- Transfer onto a wire rack and cool it well.
- Slice only after 2-3 hours of cooling.
This will help reduce the wheaty taste. U can skip

Yes you can. Use double the quantity of instant yeast
Pradeepa Nair do you have tried and tested recipe for ragi bread
no. ragi is gluten free, so might be difficult to make breads with only ragi. u can try any multibread recipe

Tried this recipe Pradeepa…and it did not turn out as good as urs but the taste was amazing….n the addition of sweet lime juice really works wonder…will retry

How long does it take for the dough to rise?
It depends on your weather conditions and temperature of the kitchen. For me it took around 50 minutes.
