Banana Upside-down Yeasted Rolls
Very often we find a batch of over ripe bananas in our kitchen pantry, isn’t it? Generally what we do is, we end up making cookies or cakes or muffins or cupcakes. But this time we were in no mood for all that butter or oil that goes in making these cake batter. So we thought why not try some yeasted
bread with these bananas. We made an entire batch of dough using some banana puree and whole wheat flour along with small quantity of all purpose flour. Some part of the dough was shaped into a normal bread loaf and the remaining dough was used to make a sweet bread with some caramelized banana, brown sugar and butter. The loaf had a subtle flavour of bananas and it was mildly sweet, which was perfect toasted with a smear of butter.
Ingredients:
- Banana bread dough ~250 gm
- Brown sugar 2-3 tbsp
- Banana 1 big
- Cinnamon powder 1 tsp (optional)
- Butter 2 tbsp
- Almond flakes 1-2 tbsp
Method:
- Take a 6 inch round cake tin and add a tablespoon of butter into it.
- Heat it till the butter melts and now sprinkle 1-2 tablespoon of brown sugar.
- Sprinkle some almond flakes on top for it.
- Lay finely sliced banana in the pan and caramelize it for few seconds.
- Roll the dough into a big rectangle.
- Spread butter on the rolled dough using a pastry brush.
- Sprinkle brown sugar on top. You may also sprinkle some cinnamon powder.
- Alternatively, you can melt the butter and add the brown sugar and cinnamon powder.
- Apply this paste on the rolled dough.
- Now roll the dough tightly into a log.
- Cut the log into 2 inch long pieces and arrange them in the cake tin which is already layered with butter, sugar, banana slices and almond flakes.
- Cover and proof to for 20-25 minutes till it looks puffy and proofed.
- Meanwhile preheat the oven at 180-200 degree Celsius for atleast 10 minutes.
- Bake it for 30-35 minutes till the crust looks golden in colour.
- Remove from oven and apply some butter on top.
- Demould it and cool for few minutes and serve it warm with a drizzle of melted chocolate or chocolate/butterscotch/caramel sauce.
Notes:
- You may sprinkle some dessicated coconut or freshly grated coconut as a filling along with finely chopped nuts or dried/dehydrated fruits.
- You may add some vanilla extract or cardamom powder in the bread dough for a better flavour.
- The entire whole wheat flour can be replaced with all purpose flour or partly with all purpose flour.
- The brown sugar can be replaced with an equal amount of jaggery powder.
