Corn-paneer-cheese sandwich
Don’t we all love sandwiches? How about a healthy corn-paneer-cheese sandwich with grated cheese in it. I am sure you are going to love this. This is an excellent

Ingredients:
- Bread slices 6
- Salt to taste
- Boiled corn 1/2 cup
- Paneer cubes 1/4 cup
- Capsicum 1 small
- Onion 1 small
- Grated cheese 2-3 tbsp
- Oil/butter 1-2 tbsp
- Coriander leaves 2 sprigs
- Turmeric powder a pinch
- Red chili powder 1/2 tsp
- Chat masala a pinch
Method:
- Chop the onion and capsicum finely.
- Heat a teaspoon of oil in a pan and saute the onions for a minute. Add capsicum, boiled corn and paneer.
- Now add salt, turmeric powder, chili powder and chat masala. Mix well.
- Turn off the flame and garnish with finely chopped coriander leaves.
- Use any bread of your choice and apply some butter to it.
- Fill it with the vegetable mixture and sprinkle grated cheese on top and cover it with another bread slice.
- Repeat with the remaining bread slices.
- Heat a tava and toast these sandwiches till they are golden and crisp on both sides. Apply butter or ghee on top.
- Cut it into triangles and serve it hot with any chutney or tomato sauce.
Notes:
- You can use Italian herbs like oregano, chili flakes etc.
- Finely chopped blanched broccoli, carrots, coloured bell peppers, mushroom, tomatoes etc can also be added in the filling.
- You can toast this in your sandwich maker too.
- I prefer buying while corn (with the skin on it) and then steam it for 10-12 minutes. On cooling I manually separate out the kernels using a spoon or so. It turns out to be much better in taste and more economical than buying ready made corn kernels.
