Shahi Tukda
A simple and yummy dessert, perfect for your loved ones. Only the rabri making part will take a bit of time. If you have homemade bread at home, you can make this very easily. You can add some condensed milk and reduce the time required to make the rabri. Bread slices can be replaced with milk rusk too. Sorry for the pictures with such low lighting. Just managed to click a few pictures before I served this to my guests late last night.
Ingredients:
- Bread slices 8-9
- Sugar 1/2 cup (100 gm)
- Cardamom powder 1/2 tsp
- Ghee 2-3 tbsp
- Full cream milk 1 litre
- Saffron a pinch
- Chopped almonds 1-2 tbsp
- Chopped pistachios 1-2 tbsp
- Custard powder 1 tsp (optional)
Method:
- Use any bread of your choice. I have used a small loaf of semolina bread.
- Cut the slices into desired shape , either square or round or triangular. You can trim the edges of you want.
- Now either deep fry these slices in ghee or simply toast it on a grill pan using ghee.
- Take around 1/4 cup of sugar and add 2-3 tablespoon of water to it and boil to make sugar syrup. Add some cardamom powder to this.
- Dip the toasted bread slices into the sugar syrup and arrange them in a dish.
- To make the rabri, heat the full cream milk in a heavy bottom pan and bring to a boil.
- Add few strands of saffron and the remaining sugar and stir continuously. You can add a teaspoon of vanilla custard powder dissolved in 1 tablespoon milk and add it to the boiling milk.
- Keep in a medium flame and reduce the milk till is thick and creamy in consistency. Add finely chopped almonds and pistachios.
- Remove from flame and allow it to cool well. Refrigerate it till you are ready to serve it.
- Place the bread slices in a small serving plate and drizzle the rabri on top of it very generously.
- Sprinkle some more slices of almonds and pistachios.
- Serve it to your loved ones with lot of love 🙂
Notes:
- You can increase the amount of sugar if you like your desserts very sweet.
- You can use apf bread or a combination of apf and wwf bread.
- Deep frying the bread slices in ghee will enhance the taste and texture. But toasting with ghee is also equally tasty, and ofcourse less fatty.
