Orange chocochip mini cupcakes
My Neha is extremely health conscious and doesn’t ask for cakes very frequently. But some evenings, she gets a sudden craving to eat some cupcakes. These are the occasions when I make such small cupcakes for her. Just for a variety I play around with ingredients and proportions. These cupcakes are extremely moist n soft and flavourful. Who says we need to always add eggs for softness 🙂 Finally I finished my orange marmalade which I had made more than 6 months back. Please do share your feedback incase you try these at home. The recipe uses very little oil but still is very soft.
Ingredients:
- All purpose flour 125 gm
- Salt a pinch
- Baking powder 1/4 tsp
- Baking soda 1/4 tsp
- Sugar 50 gm (1/4 cup)
- Oil 3 tbsp
- Orange marmalade 1-2 tbsp
- Choco chips 1/4 cup
- Orange zest 1 tsp
- Orange extract 1 tsp
- Curd 1/4 cup
- Milk 1/4 cup plus 2 tbsp
- Vinegar 1 tsp
Method:
- Preheat the oven at 150-160 degree Celsius for 10 minutes.
- Grease a mini cupcake mould with oil or butter at simply line them with cupcake liners.
- Sieve the flour, salt and rising agents 2-3 times for proper aeration and uniform mixing.
- Mix the oil, sugar, curd and milk till sugar dissolves.
- Now add the orange marmalade, orange zest and orange extract and mix well with a whisk.
- Now fold in the dry ingredients gently.
- Add the vinegar and mix well.
- Now fold in the chocochips and mix.
- Pour the batter into the cupcake mould and tap it gently to remove air bubbles if any.
- Bake for 18-22 minutes or till a toothpick inserted into the centre comes out clean.
- Remove the mould from the oven and allow it to cool for 3-4 minutes.
- Transfer the cupcakes onto a cooling rack and cool well.
- Yummy n cute orange choco cupcakes are ready in just 30 minutes.
